
On August 3rd, we made a huge purchase that will not only help us with all of our upcoming moves, but expand!
We shared our crazy idea back in May and began not only raising funds by selling items in our home and being more strict with our budget, but also taking on more sales and custom orders. Although I am the one in the kitchen, it really takes the whole family being on board with a crazy bakery schedule to make all the yummy treats happen.
We have already started mapping out the blueprints and finalizing the layout. Since I am a cottage baker and want to stay one for the foreseeable future, I will not be doing any baking in this trailer. All items will be prepackaged in my home kitchen and then sold through the trailer at events.
And YES! I will 100% still be taking custom orders. I am simply wanting to have the ability to branch out to more markets. Since so many of my items don’t do well in the heat, an air conditioned trailer will allow me to not only keep these treats safe, but also sell more.
The most tricky part of the trailer is that we are wanting to maximize space for all future moves. This means that fixtures need to fold down or be stored easily. I have seen so many amazing ideas and beautiful inspiring bakery trailers but all of them have built ins that look like a little kitchen. And sadly, that isn’t going to work for us.

When you walk in the side door, on your right will be a built in counter in the nose of the trailer. This space will include a mini fridge, slide out trash can, sink, water filtration system, and heating system to allow warm water. It will also have one wall with simple decorations and a mirror to help the corner look larger than it really is.
All the walls will be covered in a beautiful white, horizontal patterned sheet wood. Behind the wood will be foam installation to help keep the cold air in and the hot air out. The floors will be covered in a simple gray/brown vinyl wood. There will be a large light overhead and possibly spotlights to shine on the treats.
The serving window will feature a 4 foot opening with a fold down ordering table for guests. Directly at the guests’ eye level, they will be able to view food samples through an acrylic food display directly below JST’s wooden ordering station.
The main wall will have 3 or 4 shelves that fold down and display all of the treats being offered. Along the walls will also be canvas pictures of some of JST’s finest and most popular pieces.
We have lots of “ideas” on the table that would be lovely to do, but only time (and money) will tell. We are hoping to launch and open the trailer by the end of October or sometime in November. Continue to follow and join us for the grand opening!
